Boston Butts

Fritz, if you get a new one just cover it with one of those heavy black trash bags with the draw string!

I grabbed 8 and put them in the freezer, thanks for the tip.
The new HT on Dorchester near Wescott had plenty.

I bought a pair of 10 pounders. HT in West Ashley had plenty. Had to dig around. Most were 7-8 pounds.

Important too, if they are out when you go in, get a rain check… buy them later.

One of mine is on. A real way with coals and smoke. Guess I just have to stay up all night drinking.

No foil for me until it comes off to rest, wrapped in a towel, in a cooler.

Left some dry for the gf

And some with homemade must-egar / vine-stard sauce.

It’s edible.

Personally, I like it really smokey. To the point where most people would say it’s too smokey. This one is not. Didn’t get enough smoke for me to call it the best effort yet.

andyb, nice color on the butt! What temp did you take it off and wrap it at? I’m with you on the smoke! I like to taste and smell it, on the finished product! What kind of wood did you use?

I took it off at 200. I have one of those iGrill mini probes that you see at Lowe’s. It’s Bluetooth so you just set the target temp. Went and laid down to get a nap and set it to alarm at 195. Nifty little device for sure.

I like hickory. Problem with this one was it that it was chips, not chunks. So they burned more so instead of smoking much. Knew it was going to end up this way when I opened up the bag only to see chips, but needed to get it on there and couldn’t run out to find chunks somewhere.

( use applewood exclusively now for my pulled pork. It is the best!

I took my Basset Hound one time and washed her real good. Took the after water and marinated it in a BB. Cooked it up and slapped some of my homemade sauce on it and the in-laws never knew the difference…

Crock pot butts, that’s the way.

I tried this today. Turned out great. As some of you know, I live in a predominantly Muslim area so there is no pork available. But I found out about a butcher in Bethlehem that raises and sells pork. So I drove to Bethlehem and bought a kilo of shoulder meat and cooked it in the crock pot for 5 hours on high, then took it out and pulled it apart. Back in the crock pot with some pan drippings, BBQ sauce, Tabasco, and mustard for 15 minutes. It was very tasty, and I’m still stuffed.

If you’re lucky enough to be fishing, you’re lucky enough.
