Vacuum pac is the way to go. I flash freeze my fillets on cookie sheets then Vacuum Pac. I recently cooked some yellow fin caught in Venice La. two and a half years ago and they tasted like they were caught last week. I do lobster tails, doves and all my Shrimp are also done that way.All my venison is done also, no freezer burn and no waste!
If it got any better I couldn’t stand it.

WINNER!!! By freezing the fillets first, you don’t pull the moisture out of them when you freeze them. I wrap them in saran wrap before freezing. This also is the best way to freeze shrimp.

What exactly do you mean by flash freezing, Bug Catcher?

Trying to visualize your process… you wrap the fish in saran wrap and then freeze it and then vacuum pack it?
Or, do you freeze it in saran wrap and then later unwrap the saran wrap and repackage in vacuum packing for long term?

Fish guy, after I clean and debone my fillets I cut them into meal portions and lay them on cookie sheets and put them in the freezer for about 45 min to an hr. They will flash freeze on the outside and hold the moister in the fillet which also makes it a lot firmer and won’t crush the cut when you vacuum it down. I find that Mahi tend to only last around 6 mo, but grouper will last up to a year without any loss of quality. I’m critiqued often for the amount of fish I keep but nothing goes to waste and after the season for grouper closes I will still eat fish three times a week that tastes like I caught it yesterday! Which is nice in April after the seasons been closed for months. Good luck, need any help PM me, Ed.

That is what I do. I freeze them overnight, then vac seal

Nice tip. Re: flash freeze before vacuum sealing. I’ll be sure to try it. I’ll be working on getting more
fish in the freezer with the new ride I got.
