Black Sea Bass by a long shot. Inshore, offshore, salt, fresh - BSB wins. Everytime I put a peice of BSB up against anything - people always pick the BSB.

Inshore: Cold water Striped Bass, Weakfish, Spottail and Black Drum.

Since trigger was mentioned…sellsfish skinned and gutted this trigger for me. I brushed some melted butter on it, sprinkled with salt and pepper, and stuffed the cavity with crushed red pepper, minced garlic, and a bay leaf. Wow, was it good. My brother and I ate half of it before it ever came off the grill.

Pro tip: The trigger fish cheeks are the best part. My dad tipped me off to that.

Whole flounder!!! A fish that is just legal is the best. My Granddad and I used to love those 12" flounder, but that’s a thing of the past now. To us, the bones make it taste better!

I remember the first time that I cooked Sheepshead for my wife. I pan fried it in EVOO and butter with a little salt and pepper. She proclaimed it to be her favorite fish. My favorites, in no particular order, are Flounder, Redfish, and Sheepshead for salt water, but I have to include Crappie on my “all fish” list. By the way, I love the potatoes that way.

3)Fried Bream with grits and hush puppies

Hickory smoked Mullet hard to beat split open(no need to scale) place on foil (scales down)in the smoker and slow smoke…remove with foil stuck to skin and pick off the smoked meat…(bones,skin ,and scales stay in the foil…)
