I like things simple and cheap. I use a Tramontina kitchen knife with poly handle like is often used in commercial kitchens. I keep it close at hand when I’m in the yak by making a sheath out of a piece of foam which I hot glued to the side of the cockpit. It came out a little rough as I was only testing a prototype but it’s worked so well that I haven’t tried to improve on it yet.
