Freshwater definitely reacts BADLY with tuna meat. It will turn mushy in your hands.
However, most people can’t tell the difference between top grade tuna and crap anyway.
Oh well, it tastes pretty good to me, water or no water. I sear it. I eat some sashimi style while cleaning it every time. Good stuff. I washed this blackfin meat in the pic pretty thoroughly (as always) and it was bigtime yummi, no mush. To each his own, though, I reckon. No matter anyway. Just eat it fresh or vacuum bag it and it’s a moot point. Either way, the answer is still the same. Blackfin is great stuff.
