For the shrimp and grits just use good stone ground grits, cook in chicken stock and hit it with a splash of heavy cream at the end.

Most definitely on the chicken broth. I use chicken broth and half and half, no water.
Used to use a combo of heavy cream and milk to go with the broth, but I’m trying to eat better as I get older. Half and half works well.
You know half and half stands for half milk and half cream right? Your old combo and half and half are the same thing.
I used to use a LOT of heavy cream. Switched initially to half/half to save on fat grams, and have tried fat free half/half. Still tastes good, just not as rich.
I use shrimp stock and half and half in the grits… and shrimp stock in the gravy… I like the idea of crab cakes with it, will have to try that.
Oh, and I am John’s Island born and bred, but I LOVE cheese in my grits.
Long Enuff, I made your Phillips crab cake recipe for guests today. I followed the recipe on the back of the can only I X4 it. Used 2 pounds of Jumbo Lump! I did add some sliced green onions to the mix. I also baked them in the oven at 375 for 20 minutes and finished them off in a frying pan with butter! I made 9 really big cakes and feed 5 people with no leftovers! Great recipe and the cakes held together perfectly! Thanks for the recipe. Server them with a fresh sweet corn and halved sweet cherry tomato salad, with cilantro and a little rice vinegar. Went with the cakes, real nicely!
Tomato Corn Salad Recipe:
2 large ears corn steamed, boiled, or grilled until done (about 6 minutes) and cooled*
1 pint or more of sweet cherry tomatoes halved
1 to 2 tablespoons fresh chopped cilantro, stems may be chopped, as well
1/4 cup (or less) of seasoned rice vinegar
Coarse sea salt and freshly-ground black pepper to taste
Let the corn cool slightly and then cut the kernels from the cobs (Scrape the corn kernels from the ears of corn by using a sharp kitchen knife and a large cutting board. Cut off the stem end to give a flat base. Hold the ear, tip end up, then cut downward, removing a few rows at a time).
In a medium bowl, combine the corn kernels, cherry tomatoes, salt, and pepper; add the seasoned rice vinegar a little at a time, until you get the taste you desire.
If making ahead, hold the vinegar, salt and pepper until just before serving, then add and mix well.
Good looking stuff Easy. We do eat well on here, don’t we.

One of the small pleasures in life:smiley: Try the corn and tomato salad! Real easy to whip up and everyone eats the heck out of it! None left. I looked for some leftovers last night and couldn’t find it in the fridg! Asked the wife if she threw it out and she told me she ate it. Wants me to make more!
I will try the corn salad and use some of my garden maters while I still have them.

This is the easiest way to make a slap yo mamma shrimp and grits:
1/2 pound of your favorite bacon
1/2 large bell pepper
1lb of small shrimp
1 cup of grits
Dice bacon and Bell pepper into small pieces. Fry the bacon in a large frying pan until almost done, drain off some of the grease, but not all, then add the bell pepper and shrimp. Sautee until shrimp is cooked fully. While that’s cooking, cook up the grits however you like them.
When the grits are done, dump all of the bacon, pepper and shrimp in and mix thoroughly.
Enjoy!

There is something magical about the flavor combination of tomatoes and corn. Try this while you’re at it: Slice a piece of some fresh hot cornbread in half and butter both sides. Put a slice of fresh tomato on top of each one. Proceed to chow down.
If you’re lucky enough to be fishing, you’re lucky enough.
