2005 Yamaha 25 hp MSHC 2 stroke help

Bought this motor back in May. I’ve used ethanol free since then and motor has always run great for me. My motor went for about a month being unused and it would crank but then putter out. So I took the carbs out and cleaned them, one of the pins did seem to have a clog. Put the carbs back in and the motor cranked right up but was sneezing at idle and especially after I would rev the throttle and the rpms came back down. It never died at idle but it would sneeze (smoke shoot out of the prop area).
So I took the carbs apart again and unscrewed the low speed needles in both carbs out one complete turn, the first time I put it back together I had them screwed in all the way. Same thing is still happening. Starts up great but is sneezing, never did this before I messed with the carbs.

I haven’t put it under a load yet, only thing I have done is run it on muffs.

Bulb is pumping gas into carbs but doesn’t seem to be getting super firm.

Also I didn’t replace any of the gaskets when I took apart the carbs.

This is my first time messing with outboard carbs so any help would be appreciated. Thoughts?

UPDATE: Ran the motor and coughed a few times when I first got it in the water, twice it died when it coughed. Ran great at top end and only coughed maybe twice more at idle.
Any thoughts?

if its sneezing, its most likely running lean
running lean is the most common cause for bl;owing up a 2 stroke engine
carbs probably still aren’t clean enough or the carb isn’t tuned properly
