ok heres one of my “looks fancy but its not” quick and easy dinners for when you are tired of the “ordinary”…
Sun Dried Tomato and Artichoke Chicken
......with Arugula Mushroom salad.
Ingredients for the chicken dish.
(1) teaspoon fresh thyme leaves(remove stems)
1 & 1/2 lbs boneless skinless chicken breast cut into 1 inch chunks
1/4 cup flour
(2) tablespoons canola oil (can also use olive oil)
1/2 cup white wine
(1) tablespoon lemon juice
(1) (14 oz can) quartered Artichike hearts (drained)
1/2 cup julienne cut sun dried tomatoes( I use the jarred ones in
herbs but can use ones in bag)
(2) tablesppons butter(real)
*grated parmesan cheese
place oil in pan over medium heat and allow to heat
place flour in zip lock bag and drop chicken into it and shake until coated
drop into oil and allow to brown lightly, turning gently (3-5 mnutes)
pour in white wine and cook over medium heat 3-5 minutes until slightly reduced
sprinkle/ squeeze lemon juice over chicken and then gently fold in other ingredients (butter,artichoke hearts,sun dried tomatoes) …cover and allow to cook over medium heat another 5-10 minutes until chicken is done…sprinkle with fresh thyme and parmesan cheese and serve with salad as follows…
Arugula Mushroom salad
(1) small red pepper(sliced thin)
sliced baby portabello mushrooms
baby arugula leaves ( I like to mix mine with baby spring mix leaves)
( 1/3 cup macadania or walnuts…optional)
small cherry tomatoes(optional)
****1/4 cup “Annies Natural Goddess Dressing”…find it on the dressing aisle with the fancy ones, got mine
