Why were they recording down the canal 30 seconds before you even see the first ripple?

Because the camera cannot show the things you can see clearly with your eye. I’ve seen mullet (way smaller than that tuna) cruising the surface, much farther away than that tuna would have been 30 seconds before the camera showed the ripples.
