a little quick shrimp dish

fished until about three today…came home and cooked this for dinner.

had some fresh sweet yellow, orange and red peppers…cut them up, added in 4 cloves chopped garlic, some scallions,cherry tomatos, kosher salt and fresh ground black pepper. added a tablespoon roasted tomato basil pesto . tossed all of this with three tbalespoons olive oil and baked in the oven on 425 for 15 minutes…smell of it baking was wonderfulll!

added in some peeled and deveined shrimp I caught today and cooked for a few more minutes. Removed to a bowl…tossed in some feta cheese and fresh parsley and a few pieces of cilantro…with a little frsh lemon juice squeezed over the top. mmmmm

haha////yeah…until i open my mouth :slight_smile: just a little too sassy at times :slight_smile: and btw…i do know how to work on cars/trucks. Have Rebuilt and replaced motors with donnie on the side many times…have helped drop a couple fuel tanks and replaced fuel pumps…some a/c stuff ,starters…brakes…can be sitting at a traffic light…hear a car making noise and tell donnie what it is :slight_smile: I thank him for that… lol…funny thing is…when we first started donnie would have me scrape the gaskets off the heads and clean off all the old burnt oil on motors we were rebuilding…told me it was a very very important part of the job he was “trusting” me with…that was when we first got together…i wisened up quickly :slight_smile: I have fiddled with boat motors too…but know that if all else fails…unlike a car you have a paddle and if that cant get you home…drop anchor and make a call. thanks for the compliments! I bet Donnnie “trusts you” with all kinds of “important” chores. I’m going to try that on my wife…not expecting it to work but it will be good for a laugh (and a “are you nuts?” look). “Honey, I won’t let just anyone wash my truck. But I trust you so much that I will allow you to wash it AND dry it. I’m a giver.”
