fished until about three today…came home and cooked this for dinner.
had some fresh sweet yellow, orange and red peppers…cut them up, added in 4 cloves chopped garlic, some scallions,cherry tomatos, kosher salt and fresh ground black pepper. added a tablespoon roasted tomato basil pesto . tossed all of this with three tbalespoons olive oil and baked in the oven on 425 for 15 minutes…smell of it baking was wonderfulll!
added in some peeled and deveined shrimp I caught today and cooked for a few more minutes. Removed to a bowl…tossed in some feta cheese and fresh parsley and a few pieces of cilantro…with a little frsh lemon juice squeezed over the top. mmmmm

I’m going to try that on my wife…not expecting it to work but it will be good for a laugh (and a “are you nuts?” look). “Honey, I won’t let just anyone wash my truck.
