Advice on buying a kayak

I’m looking to get my dad a kayak for Christmas so he can get out and fish more often. He wouldn’t use it a ton but would probably get out a dozen or so times a year, maybe some freshwater pond or river fishing and then head to Charleston 5-6 times a year with it. I know there is a wide range of bells and whistles to get and a good number of brands to consider. I really have no idea on which brands to avoid or get or even where to start when it comes to kayaks. He is 6’3" so I’d like to get something that is comfortable in.
Any suggestions on brands, size, other things to consider?

If price is an issue and you need to go the cheaper route just make sure that it has a good rudder or at least a rudder molded into the kayak. Otherwise they tend to not hold a strait line and that is the worst when you stop paddling to cast and the kayak starts turning another direction or going in circles. Hope this helps! Also now that I think about it I really like when there is a easily accessible spot for a small cooler for beer. They don’t all have this!
