After releasing a bunch of legal fish

I ended up with a nice pile of sea bass. Egg and milkwash and some house autry. Probably my favorite eating fish.

Looks good! Question, I read once you shouldn’t rinse your saltwater caught fish with fresh water, something about making to flesh mushy. Your prep’d filets look nice and clean, so it just made me wonder how you rinse yours. Thanks!

Not much rinsing involved, these fish had been on ice for about 36hours when I got them.

I agree – not really a glamour species, but one of the best eating out there! Give me a plate of BSB and triggerfish and I’m a happy man. Only fish I think I might like better would be fresh wahoo.

that is probably my favorite salt water fish to eat. i call it the salt water crappie. good stuff.

Looks like some good eats, but that last pic with the asparagus doesn’t look like house of autry. Looks like sauteed.

No doubt some BSB is a good eating fish. Ever try them after scaling and leaving the skin on? A little more work but worth it to me.

Been fortunate enough for getting a lot of Dolphin this year, They fry up fantastic just like you did your BSB.

i have had one of those batter pros for years. it is the best way i have found since i used to use paper grocery bags.

Fritz may not have the paper grocery bags but i like the old school cardboard box that he uses to dump the fried fish in.Dumped many a batch in a Falstaff case holder.It's about time for another picture of your pet deer Fritz.I seen two bucks in the marsh last week and their horns were just starting to come out.

I love doing this, but I’ll just head and gut them, not even taking fillets. This reminds me I need to cook whole fish more often!

Depends on the kind of fish, but yeah I don’t mind picking the meat off the bone. I think it tastes a little better with the bone. Whole fried catfish about 8 or 9 inches long are amazingly good. I also prefer “bone-in” flounder and small snapper.

I really like the quality of fish after I keep them on deep ice (but not frozen) for a day or two before I clean them. It keeps the blood out of the meat and they are so much easier to clean properly.
