I just ate some of the amberjack we caught over the weekend… Pretty darn tasty! I blackened some of the head pieces and i will definitely eat some again:smiley:

I fried it fresh after our last trip and thought that it was pretty good… A little on the firm side but the taste of the meat itself was good.
I’ve heard that it is best cooked grilled so maybe we’ll keep another one and try that.
It can be the best tasting fish on the planet, but I just can’t deal with the worms. They’re such a big turnoff. Y’all can have my portion.
