Anybody got something different w/ ground venison?

I cook for our weekly hold’em game and am running out of ideas. I’ve done the usual - burgers, baked zita, baked spaghetti, enchiladas, nachos, mustard fried (cube steak), chili…etc. Just wondering if anybody has anything new with deer meat (particularly with deer burger). Its best if I can do a casserole type dish so I can pre make it that day and heat it up to be ready at break. Any ideas would be appreciated. Thanks!!!

i love stuffed pepers, you can cook the rice and ven then load the peps, put em in the fridge and then pop em in the oven on high heat to softem the peper and heat the insides.

I haven’t done any stuffed peppers. What all do you put in them? Ground sausage or burger?

both, and you can do cabbage rolls if you don’t like peppers.

A Wellington is great that the wife does.
She mixes the meat with a can of cheese sauce and some spices then wrap it up in a large crescent roll (from the can) then bake.
Tasty…dont know exact recipe but sure you can find something online of the sort!

my gf does a casserole with

1lb hot sausage
2 cans chicken noodle soup
1 canmilk
1 cup raw rice
can of mushrooms with juice
sauteed celery
1 bell pepper

cook everything then put in casserole dish. cover and bake for 40mins @350

7-Layer dip: Cook up 1 to 1.5 lb of ground venison w/ taco seasoning. In caserole dish, put in 2 cans of warmed refried beans spread out, put in cooked venison spread out, put in 2 cups of sour cream spread out, put in 1 jar of salsa spread out, put in grated mexican cheese mix spread out, put in grated/chopped lettuce and tomatoes spread out. This is a killer dip for Tostito’s scoop corn chips. Drink beer and SPREAD OUT!

If you have some picky eaters try putting your ground venison in a colender(sp?) and pour some water over it rinsing out some of the blood. Let it sit and drain for a couple of mins and then use. My sister in law refuses to eat venison because of the way it tastes, she has no clue how much she has eaten in my chillie, tacos, ect. Maybe one day I’ll tell her.

chop up some bacon, brown it, add to your ground venison(grease too) along with an egg, one pack instant oatmeal, A1, a little liquid smoke, the kitchen sink… Make some patties put on the grill.

Note: If you ask your processer not to add any fat( they usually add beef or pork fat to ground venison) it seems to keep longer in the freezer. Probably better for you too. Another plus in this is when you have ground venison you usually don’t get your deer most processors do batch runs on the grinder and give you hamburger apropriate to your weight. If you ask for no fat then you have a better time of getting your deer only. Not saying this about all processors, but… that’s usually what happens:wink:

Cook a pound of ground venison sausage or burger (add a bit of ground sage and some red pepper flakes to season if using burger)'til done and drain any liquid. Mix in 8 ounces of cream cheese and a can of Rotel tomatoes (hubby prefers the hot ones). You can serve straight from the stove with Fritos scoops, but I like to pour this dip mixture into a Pyrex plate and bake at 350 'til bubbly. Folks who refuse to eat venison gobble this up!

Taco casserole. In a 9x12 glass dish, LAYER chopped lettuce, diced tomato, 1 to 1 1/2 lb browned venison, 1 can chili beans, 1 can kidney beans (drained & patted dry), fiesta cheese covering the entire surface, ranch dressing and 1 bag of crushed chili cheese fritos covering surface. Warning, it’s good when fresh but it does not do well as leftovers. Chips and salsa as a side.

1 pack of dry Ranch dressing mix and 1/2 pack of liptons onion soup mix stir into meat makes 4 burgers with 1 1/4lb of meat best you’ll ever eat and leftovers make great breakfast bisquits

We normally have our venison ground with smoked bacon instead of fat. It makes fabulous burgers! Throw in some Kirkland’s steak seasoning, a dash of worchestershire, and a dash of soy sauce.

hey hoppy; we are talking about venison saugsage here. the only deer that you ever saw was at the movie when you cried when they shot bambi’s mama. LOL LOL.
guys; my wife makes a pretty mean chili with it and also vegetable soup, and spaghetti sauce.
by the way. i cooked 11 slabs of pork ribs on my ORION cooker sat. for a group of us around the pool. once again; perfect; especially after finishing them off by burning in some wet sauce on the grill.

CB - i think everyone but you got the fact that venison could be substituted for the sausage. lol lol
