Apple Wood Smoked Venison Hams

Anyone tried these? I’m have a couple done (from Cordays) because I heard it was delicious. Shot a few does this weekend.

I saw that smoked hams and bacon on a lowcountry processors list. Wondered WTH too? I’ve heard one great report on the hams and a couple real bad - not from Cordays. Might depend on who and how cooked? It is real lean and if dried out would not be good IMO. Let us know how it is.

when they cure those things, its supposed to be cured ~1 day for every 1/2 inch thickness to the middle - i expect you have a week or better to wait just on curing

I’ve had Cordray’s smoked hams and they’re awesome. It does take a little while to get them back but I’ve always had mine before Easter (ha ha ha!) Seriously, I get a couple per year, one for Easter other for Rockville. Take leftover shavings and use for cooking wherever you’d use salted ham (think bacon bits in mac-n-cheese!). I think they take longer because of brining/ injecting and smoking. The other meat is just cleaned and vacuum bagged fresh.
I did get a sample of Venison bacon from there last night but woke up too late to make breakfast this morning. They also just released a venison-apple sausage in links that’s phenomenal!

Cordrays hams are great

The Applewood smoked hams from cordrays are very good. They’re 25.00 per ham but it’s worth it. I got one for Thanksgiving and one for Christmas. I was a skeptic but they’re really good.
