Charter got cancelled this morning and on the way home I stopped by the teeter for some groceries. They had babybacks on sale so I “caught” a rack. Usually cook boston butts and have some ideas but lets hear how some of yous* would do them.
i cook them like i do any other rib, just not as long
make a rub with some seasonings you like and coat liberally. but some beer (or mikes hard lemonade), water, crushed garlic clove and a shot of vinegar in the bottom of a big baking dish with a rack on the bottom. cover tightly with foil and poke a couple of holes in to vent. put in the oven and steam untill fall off the bone tender.
then i do 2 things. fire up the grill and char the ribs with bbq sauce brushed on them. or - reseason with the rub and char on the grill. serve those with a bbq sauce on the side
i used to do them like hoppy does but since i have the orion grill i use it. however with only one or two racks why use up the charcoal. also have the set it and forget it rotisserie and it works great for ribs. i do like finishing off on the grill for the little burnt on sauce.
NOTE: kroger has baby backs on sales for $2.99lb . was just there.
-Chop the ribs to fit on your broiler pan.
-Fill bottom of broiler with 2 cups water, 1 cup white wine vinegar
-Salt and pepper the ribs and cover up on broiler pan with tin foil
-Set oven at 250F and bake for 3 hrs
-Heat up grill to grilling temp
-Finish ribs for 15 minutes on grill with Sweet Baby Rays sauce

Any of you guys think a little yellow mustard coating on some ribs before you rub them down would give them the same kind of zing that a boston butt gets from the mustard???
