It sounds strange, but I tried it, and it is a home run! I got the recipe from BH&G. It takes some work, but you will be very pleased with it slathered on some toast with fried eggs! I will type recipe if needed.

Ingredients:
3 lbs. bacon cut into 2 inch strips- I like thick cut
4 onions thinly sliced
8 cloves garlic, thinly sliced
1 1/2 cups strong black coffee
1 cup brown sugar
1 cup cider vinegar
1/2 cup pure maple syrup
1 teaspoon black pepper
Procedure:
Crisp bacon (whatever method you prefer)
Reserve 2 TBLS bacon grease to saute onions and garlic in Dutch oven
Cook garlic and onions until tender
Add coffee, brown sugar, vinegar, syrup, and pepper
Bring to a boil while stirring constantly for 2 mins. then add bacon
Simmer for 2-3 hours (This is where patience is involved) until mixture is thick and syrupy. You may have to add a little water during the process to keep from drying out
Let cool slightly
Transfer to food processor and pulse until desired consistency (chunkiness)
Scrape into half pint jars- Makes 4 jars
Will keep in fridge for 1 month or freezer for 6 months
