If you are constantly loosing shrimp under a cork, your probably over a bunch of pin fish. Move to another spot or go to a smaller hook and only put a pinch of shrimp on it if you want to target them.
As for hooking a shrimp, it is all about what you are targeting, size and how aggressively they are feeding.
I’d tell you how I hook mine, but I do it differently than my fishing partner and some days he smokes me and others I out do him. Since switching to circle hooks I’ve had to learn not to “set” the hook. I started out cane pole fishing, so I have a bad habit of snatch setting the hook.
I’ve been meticulous about not brain hooking the shrimp and keeping it alive and kicking were my dad would put the hook anywhere that was convenient and out fish me.

I wish it were legal to dynamite a pod of pinfish. They are all over the place. I never release them, I use them for cutbait or as a counterweight in my cooler.

Scrimp is scrimp. Everything eats it, and its soft. My advice is if you get into some nuisance fish, abort! Maybe throw something heartier, like arties or a mud minnow, until you are sure your target fish is there. Then toss the scrimp.
