So fishcrazy, dmzslam, and I caught some bsb’s yesterday, decided to gut a few and save them for lunch today… So I gutted a couple smaller ones last night left on ice overnight and scaled them this morning. Mixed some pressed apple juice and honey together as a glaze, they turned out perfect. This method is awesome with snapper:frowning_face:, flounder, and bsb as well any other fish youd like, also this method in a smoker is amazing, Ill do that next week…
- Scale fish
- Score fish several times both sides or one depending if you stand fish in pan or lay fish down on their side, I like to score both sides and stand them to crisp both skins sides
- Put thin layer of olive oil on bottom of baking dish
- Brush on apple/honey glaze pretty heavy first time
- Season fish: salt, pepper, little bit of garlic
- Place fish standing in pan
- Cover with Foil
- Bake on 350 for 15
- Take off foil, apply more glaze( a thin layer)
- Turn to broil 500
- Broil with no foil for 8 mins (makes skin and fins crispy perfect)
Threw in some spanish rice and italian cut green beans, turned into a fine lunch sorry for blurry pics, phone got salty yesterday
