Baked Merganzer

Clean and pluck the 3 Hairy Heads you thought were Wood Ducks at 5 min. past shooting time. Soak them in Buttermilk for 2 days. Rinse, salt and pepper to taste, and stuff them with pearl onions.
Place the Mogans on a 3/4" thick piece of treated plywood and bake for 2 hrs @ 350 degrees. Remove ducks from oven and let them cool for 10 min. When cool “to- the- touch” throw the ducks in the wastebin and eat the plywood.
Especially good if matched with a full handle of Jack Daniels and a cigar.

About 30 years ago when I was a teenager some of my friends and I thought merganser omlettes would be tasty breakfast treat after spending the morning in frigid duck blinds. Greasy,fishy tasting ,tough,dark meat. Took the better part of the day to get the taste out of our mouths. Dumb kids.
