BBQ Cabbage

Well I didn’t catch it, but you can pick it.

Anyway it is pretty tasty

BBQ Cabbage

Set the cabbage on a cutting board on its crown. Cut out the core by angling your knife about 3 inches down toward the center of the cabbage and cutting in a circle that is about 3 inches in diameter. The piece removed should look like a cone.

Crumple a piece of aluminum foil and shape it into a ring about 3 inches in diameter. This ring will hold the cabbage upright while working on it and also while grilling.
4 slices of bacon cut in small chunks.
1 small onion
¼ cup BBQ sauce (your favorite)
Course salt and black pepper.

Fry bacon till transparent and then add the onion. Sauté for 3 or 4 minutes till the onions start to get transparent. Drain off bacon drippings and save for brushing outside of cabbage.

Add BBQ sauce to bacon onion mixture and heat to bubbling.

Pour mixture into cabbage and top mixture with slices of butter. Brush the cabbage with bacon drippings and add salt and lots of course ground black pepper.

Place on grill and cook till fork tender. On a regular grill it should take 1 to 1 ½ hours. On the smoker it could cook for 6 – 8 hours to get tender.
