Beat the heat

I threw together an easy summertime meal. With it being so hot I kept it fresh and simple and rolled with what was in season. A greek pasta salad with chunks of feta, sweet tomatoes, fresh basil, kalamata olives, artichoke hearts and lemon. Gave it a good toss with some good olive oil and it came out pretty good. Charred up some fresh shrimp and had some warm blueberry pie from Kudzu bakery in Mt. pleasant. It was by far the best blueberry pie I have ever had. They make some killer food. Nuggets of crunchy toppings. Loaded with sweet blueberries topped with a scoop of vanilla bean ice cream that did it’s job and melted all over it. Summertime eating.

Easy dish Wally. Whack up a few fresh veggies and make the pasta taste good. Just can’t do cream sauce during the summer. Brush the shrimp with plenty of butter after coming off the grill and give them a good squeeze of lemon. Hope your doing well Sir:smiley:

That tomato and basil just reminded me that I need to sweet talk the wife into a tomato pie.

Downtown quality, no better. They have lost some of their luster on the peninsula.
