Whats your favorite recipe? When we put them in the fry pan, they got a little roughed up. Is putting them in the oven and baking them the best way?
We smoke them, bake them and fry them. They make a good stew also
Baked is good but my choice for best fried seafood ever are Sheepshead filets (just a bit above flounder).
Filet and Fry, House Autry’s seasoning is where its at … watch out for the few bones though, they have some that seem to “hide” in the filet. I have also heard of people chunk out the filets and boiling the filet chunks “Poor Mans Lobster” (tried it, liked it, fried is better) Hope it turns out well

lightly salt & pepper then dredge in flour,fry fillets in 5/6tbs olive oil , remove and set aside when browned. add a 1/2 cup of diced green onions to the olive oil, cook a few min till translucent. Add 1 cup white cooking wine and add the juice of 1 lime, cook untill reduced by half. remove from heat, let cool for just a moment. slowly add 4 pats of butter to the gravy stirring constantly. when mixed well pour over fish, enjoy! let me know how it turns out, Ed.”
We like to grill it. Season the fillets how you like with salt, pepper, cayenne pepper, etc. Then put on a hot grill and brush with a mixture of equal parts melted butter, worcestershire sauce and lemon juice several times during the grilling process. If the fillets are on the smaller, thinner side you may need to cover the grate with foil.

I blacken it. Some may say “why would you do that to such a tasty fish” Bear with me… Make a slaw of red cabbage, shredded carrots, a bit of sugar and apple cider vinegar. My kids don’t like spicy so instead of blackening seasoning I use Cavendars Greek seasoning. Also make a sauce, tartar works but I like yogurt, cilantro and lime juice. Assemble “blackened” fish, slaw, and sauce into corn tortilla and you have the absolute best fish tacos!
Blackening fish is simple: put cast iron skillet on grill outside on high so that it is extremely hot. Coat fillets in melted butter, sprinkle blackening season on filet. Put seasoned side down on hot skillet, at which time you will sprinkle other side with seasoning. 3 minutes later flip, 2minutes later DONE!

i rubbed fillets in taco sauce and wrapped em in foil then grilled em. sheephead make GREAT fish tacos!
I’ve fried them but my favorite way to cook sheephead fillets is sauteing them in italian dressing. It makes a great fish sandwich.

I have a great one, use the bottom of the broiler pan, lay the cleaned fish in , slice a lemmon about 3/16 thick and potatoes the same, lay them out over the fish, coat the whole fish with A-1 sauce, cover and bake at 350 about 30 minutes. This goes way back .
