This has been discussed before but is really good. Just take filets score the inside and season. Cook scales down till fish is done. Then scoop out the goods. Fish on the “1/2 shell”.

I do love me some redfish on the half shell but as far as some of my favorite whole roasted fish…
Various snapper species (Yellow tail, Red, Mutton, Mangrove…)
Lionfish
Trout (freshwater)
