Black bean and Chicken Chilaquiles Bake

Quick,easy

1 cup thinly sliced onion
5 garlic cloves ,minced
2 cups shredded chicken breast meat
1 15oz can black beans drained and rinsed
1 cup fat free chicken broth
1 small can of mexican diced tom. with chile peppers
( I used ro*tel brand and added a little more salsa)
15- 6 in CORN tortillas cut into 1 inch strips
1 cup shredded queso blanco or mexican blend cheese

Heat large non stick skillet and spray with pam or use tablespoon oil.
heat…add onions, brown…then garlic, saute for about 2 minutes…then precooked shredded chicken for another 3-4 minutes. remove and put mixture in bowl…stir in beans.

Take skillet and place tomato mixture and chicken broth…bring to a boil and then simmer for 5 minutes, stirring occasionally.

place half of cut tortilla strips in bottom of 11x7 baking dish sprayed with cooking spray. add 1/2 chicken/bean mixture than other half of tortilla strips. pour tomatoe mixture over the top and sprinkle with cheese. Bake at 400 degrees for 10-15 minutes( I usually turn oven on broil for 1-2 to brown cheese a little more)
allow to sit for 2-3 minutes before cutting.

Recipe came from a book… main dishes under 300 calories a serving…

no…they dont seem to want to ripen for some reason!!! should I try putting them in a paper bag??? :slight_smile: lol
