1-1 pound dry peas- prepare per package
8-12 oz Country Ham- fine dice
2-med Jalapeno-fine dice
1-med onion fine dice
1-red sw. pepper- fine dice
1 carrot-grated or fine dice
2-clove garlic-minced or grated
" toe of garlic"
Saute Ham and veggies in a little olive oil till onions are translucent
2-eggs
1 1/2 tsp cumin
1- tsp salt
1/2 tsp blk. peper
1/2 tsp cayenne pepper
2-tbl fresh chop parsley
1 cup fine corn tortilla crumbs
Cook Black eye pea per package,drain and cool to handle.
Add Ham and veggies and spices toss to combine
Add eggs and then the corn crumbs.
Combine and make cakes either 2" or 4"
These are good made a day ahead of time so the flavors have time to mingle. You can pan sauté or bake in the oven.
I serve them with my Homemade Corn and Redpepper relish.
These will be Gluten free if you use just regular corn chips.
