Its the most plentiful fish in our waters and I know the commercial guys trap and catch them. Why are they never on the menu anywhere. .?
when i was a buyer for a large distributor we bought and sold them to restaurants in charleston, HH, even Myrtle. Just keep an eye out for specials. Never sold as well as snapper, grouper, tile etc. But some chefs enjoy using it.
They probably sell it, but call it Chilean Sea Bass, so they can charge you more:question:
Rue De John does a whole BSB. Lucca has BSB Crudo on their menu right now.

Nobody is going to confuse Chilean Sea Bass with Blackfish. BSB’s are almost all sold out of state, New York, Boston, pay crazy money for large and jumbo (2lb and up). I get mine from North Carolina, and retail them for $4.99 lb.

It’s mind numbing you never see it around MI/PI/Gtown in any restaurants. You guys ever see it in Charleston…? Especially given the number of big ones out there now. Its funny I take people out fishing and its 75% of what we catch, then you go out to eat with them and its Salmon on the menu everywhere. A couple’s kid asked me this question.

I was told by several seafood companies (the same as what sellsfish said) that they ship it to the northern states because of them paying more money than locally and what does usually get left here are the small ones that you see in the stores. Also if you have had black sea bass and chilean sea bass you can tell the deference buy taste, and the filet size/texture easily. But it seems like I here a lot about North Carolina having massive seafood harvest/distribution, I wonder how that effects our waters and industry.

While in NYC a few weeks back, we ate at two swanky places. They both had black sea bass on the menu.
