blackened tuna

any good recipes and where can I get the blackening seasoning

I blacken fish on a rocket hot grill. I used to use my own blend, but now I just use Emeril’s Essence. Butter the towel dried fish and sprinkle on the seasonings to both sides. Then cook to you liking, I usually go three minutes a side. Good Luck.

paul phudhommes magic seasoning blends are killer.try the blackened redfish blend on that tuna. i think phudhommmes i s a little hotter than emerils.

there isn’t really a “recipe”, you just cut it into thick steaks or leave the “loin” whole, dry well and smother with blackening seasoning, throw it on a screaming hot grill or smoking hot cast iron skillet for about 30 seconds each side.

You’re right Billder, guess I was mostly looking for what different seasonings to use. Never tried it and supervisor was asking me about it. All I thought about was the zatarans seasoning. Thanks guys for the tips. I know a bunch of ya’ll like to cook different ways and I just love to cook even if it takes playing scientist. Thanks again

I always use Paul Prudhome’s Blackened Redfish Magic on EVERYTHING I blacken. Have made my own blackening seasoning, but the PP really is super good! Love to cook, hence love experimenting!
