1 pt rice wine, 1 pt honey, 2 pt soy, 1 pt sesame oil , some wasabi powder or paste (if you dont have rice wine, you can use rice wine vinegar and up the honey a tad)
Mix together and dip tuna steak in it.
Then coat with sesame seeds
Then throw it on a white-hot cast iron skillet for a short amount of time (until the seeds get toasty). Should be almost refrigerator cold in the middle.
