3 nights ago, my family of 5 enjoyed a package of dolphin and wahoo with dates of June 09 and May 09 on them. Amazing what a food saver will do…did it taste fresh? no. Did it still taste good? yes. I have 3 more packages in the freezer…thats about as proper planning as it comes…should run out shortly then stand by to stock up for the next 365 days.
I give my freezer burnt fish to the fellas that hang around the dock each time when I pulled my boat out…Hell they’ll eat just bout anything you catch anyways…Freezer burnt BSB beats saltwater catfish and toadfish any day.

You know, BSB don’t exactly have the biggest fillets either. I can wipe out 4 fish worth of fillets in a sitting.

I ran out of Dolphin on New Years day… Guess I need to put more in the freezer this year.

what is your secret to freezing wahoo when i freeze it, it taste like fido’s …s
I fill the bag with water. Seems to work for us.

Fellow long time fisherman buddy (twice my age) of mine told me after the last trip that he likes to mix warm water with a good bit of salt to make water taste like the equivalent of brackish water and let the filets sit in it all night in the fridge. He takes them out 12-24 hours later and bags with water or vacuum bags them. I tried it after last trip and seems to add extra flavor to the blackfish filets.

For top quality NEVER…I repeat NEVER soak the fish in fresh water. I had a top sushi chef put it to me another way…“Would you wash a ribeye?” Fresh water destroys the flavor and structure of a fish fillet. Take a look at a fillet that has soaked in fresh water vs one that is fresh off the fish. The soaked fillet will have a rough feel to it where the meat has soaked up water. If you own a good quality sealer, wrap the fillets in saran wrap and freeze overnight, then you can pull a much stronger vacuum on them the next day without pulling any juice out of the meat. I go as far as never washing the fillet, from fish to bag with no fresh water, and clean the table between fish, This is how all fish houses pack. Sorry PF
