I haven’t had much time to go fishing lately but I’ve been making good use of my freezer’s bounty. While sorting through the bottom of the freezer I found some nice Mako from this spring.
For fish this good you don’t really have to do much to it. I lightly coated both sides in seafood seasoning and placed in a cast iron skillet with a pad of butter on top of each and some rosemary to the side. Broil in the oven ~5 min and then carefully flip them over and cook until they flake easily. Don’t over cook!
I finished them with a little lemon and butter over the top with a spoon of capers for salt.
I haven’t had Mako in the last 3 years… That’s some good stuff. Just make dang sure to be careful bringing into the boat!! Like a Cobia with super sharp teeth looking to bite you.
Jordan, I remember reading your Offshore post about catching that Mako. That was a cool reprt and well done getting it in the boat. I ate some ONE time that was fresh and we were amazed at how good it was.
