Butterflied

I tried a first the other night. I butterflied a 16 inch red, removing the backbone and leaving both fillets together. I layed it flat and filled it with chopped garlic, chopped onion, salt and pepper, butter, lemon juice, and dill weed. I folded the fish back over and baked it for ten minutes. I than opened it back up and broiled for five more minutes. WOW!!! Definitely worth a try. I love the idea of butterflying, gives so many more possibilities.

Any other great stuffed fish ideas???

Nice. I will try on my next elongated inshore fish.

i’ve done that before on (i think) b liners. it required better knives and knife skills than i posess. while i don’t recall how i cooked it, i seem to recall is was good and easy to eat.
