Faidley’s in Baltimore (who in my opinion makes the best crab cakes on the planet) are in that 4-5oz range. In their “award winning” crab cake, they use lump only. They do offer a “cheaper” crab cake (called a backfin crab cake) made with backfin and some claw meat. This is in that 4-5oz range as well.
I’ve bought Phillips crab meet to make crab cakes and they still turn out awesome. I like to blend claw, backfin and jumbo lump. I feel the claw and backfin mixed with the jumbo lump allows me to use less crumb for binder. More crab, less cake. I prefer a 6oz crab cake I can less of those than 4oz crab cakes so I feel less guilty. Lol!

My brother lives up in Kensington, N of DC and he’d taken me to Cantlers before. I believe it’s near Annapolis, don’t recall exactly. But those were the best crab cakes I’ve ever had. They’re proud of them to, over $20 per.
So, now I’m thinking I’ll need 1.5 lbs of crab meat to make 4 good size cakes. 20 crabs?

Depends on yield from your crabs. Some crabs are “fuller” than others so you can’t put a specific number on how many crabs it will take to make “X” amount of crab cakes. Go catch’em up. Worst case scenario, you have extra crab meat leftover and there are worse things to have. Crab cakes freeze fairly well if push comes to shove. Don’t overthink it.

There’s a recipe in this section for fish burgers too. Maybe trigger fish burgers… If you don’t get enough crab, make some of these and you’ll satisfy the crowd too.

I make a (**() fine shrimp burger that my neighbors love. Basically, a crab cake but use shrimp.
