The only thing better than those crabs are those shells stuffed with an excellent deviled crab recipe! I need to get my ass out crabbing.

Every time I see an old thread like this brought up and scroll across Cracker Larry’s posts, I am reminded of what a void we’ve had on this site since his passing.

If making crab cakes, how many crabs do you estimate are needed per 3-4oz patty?

It may be just me but I always remove the lid, lungs, guts, mouth, and apron before I steam them. It seems to make the meat sweeter and lets seasoning get in and cooks evenly. Any reason not to other than the effort?

Preference and the crowd your serving. Growing up dad always boiled them whole He figured it added more flavor. I do like you and clean thoroughly befor boiling I don’t like all the mess and it seems I have less left over if serving to a crowd. A little ice bath and they can be cleaned in no time.

bonecrusher, Each crab has approximately 2 ounces of meat in them but it depends on size. A 5 - 6 inch Florida Blue Crab has only about 1.5 ounces of meat whereas a 6.5 to 8 inch CT or Maryland crab can have 3.5 to 4 ounces of meat in them. These are all approximations of course but I would guesstamate it will take two or three crabs per crab cake.

I’m with Shellfish, 2 is usually good unless they’re “poor” (Penny’s dad’s term, I think) and then 3 should do it.

Fred’s right about preference, I haven’t boiled a whole crab in years because the mess is made at the cleaning station and not on your kitchen table. My wife’s grandmother looked at me like I had a extra eye when I told her that I head my shrimp before boiling them for peel-and-eat, all about knowing your crowd!

Never been much on waterlogged (boiled) crabs. I prefer to steam them with a mixture of beer, cider vinegar, water and Old Bay (both in the water and a HEALTHY coating on top.

No matter how much it hurts, how dark it gets, or how far you fall…you are never out of the fight.

As a general rule, 8-10 crabs yields 1 lb. meat.

Go to the grocery store and get the pulled crab meat to add to your haul of local crabs. I got real excited about crabbing years ago but soon realized I’d fill up faster eating sunflower seeds.
