Anyone got a killer recipe for catfish that they want to share?

Fry catfish and put them aside for now. Fry up 5 or 6 slices of bacon leave grease in pan add small chopped up potatoes and onions to grease saute in grease, when done add tomatos (what ever kind u like diced stewed or just plain old tomato sauce) usually atlease 3 cans depending on size of stew. Now add crunched up bacon and fish to stew, salt, pepper, and texas pete to taste let simmer 30 min or so. Heres the basics you can adjust everything to your taste. I use this recipe for all my leftover fried fish. sometimes I add corn or peppers. Like I said its a great recipe to build your own from. I hped this helped.
just did this last night; i cut my catfish/stripers into silver dollar size nuggets. let them soak for 2-3hours in buttermilk. 3cups corn meal/1 cup ■■■■■■■■■■■■■■■■ pepper/ drop in 375 Degree oil and then take out when they float to the top. cannot beat it.

Get a bag of yellow onions. Peel them do not cut in half. Get 2 cans tomato sauce, 1 gallon tomato juice, 2 lemonds cut in half. 1 pack bacon.Cook bacon until crisp. In a large pot. Do not drain. pour in 1/2 gallon tomato juice, 1 large can tomato sauce, 2 lemonds cut inhalf, put in all onions. add 1 quart water. boil till onions fall apart and are tender. put in rest of ingredeance with 1 can tomato past. salt, pepper,annd hot sauce. lay your catfish on top. do not stir. cook until catfish is done. Onions should boil for at leat 45 min to 1 hrs. I do not put potatoes in mine I use alot of catfish.
