Ceviche

Seen some concoctions for it in the past, time to post em in the right place.

Need to get Penny’s skrimp dip here too.

Yeah, but do you consider a dog to be a filthy animal? I wouldn’t go so far as to call a dog filthy but they’re definitely dirty. But, a dog’s got personality. Personality goes a long way.

my simple ceviche recipe:
filet fish (any white flaky type) cut filets into small 1inch/inch cubes
put fish into ziploc
liberally coat fish with coarse sea salt
squeeze enough lemons and limes into bag to cover fish
add diced jalapenos and serranos and some olive oil fish will chemically cook in a few hrs

Would trout be a suitable white meat for this recipe? I’ve never made ceviche but after trying some in Costa Rica it moved up on my things to eat more often list! They had made it from dorado or grouper… don’t have any of that right now.

I think trout would work. I have wanted to make it for a while now too. RedDrum’s is the best and they use grouper. I can’t imagine it being bad with trout though. let me know how it turns out.

Capt N, that sounds good but you are missing cilantro(sp) and a red onion. got to have cilantro.

i would assume trout is too soft.:question:

I cut into cubes, less than 1/2" couple #'s worth
3 lemons/3 limes
dice a red onion
cilantro(enough for taste/color)
diced tomato
2 jalapenos
avocado
splash of olive oil

let fish soak for about 3 hours drain excess juice
add onion/jalapeno/cilantro/tomato stir around a bit
add diced avocado about 10 minutes before your gonna eat

My ginger salmon tartare was a success last night. I am now on to the white fish for ceviche.

Some of the fish I’ve used for “good” ceviche: white perch, sea trout, redfish, flounder, trigger fish, striped bass, AJ (sans worms) - best to date is trigger fish! Worst: catfish, largemouth bass (but may try again). I use 1/4" cubes and fill ziploc w/ Lemon/Lime and possbily grapefruit juice, frig for 2 hrs max, then drain and mix with chopped salsa veggies!

shrimp and mahi together are great, i love it spicy too so tons of japs
