Cheese and Chicken Stuffed Phillo

Tried a new recipe tonight…it was good…heres what you will need to prepare it…
4 skinned and boneless chicken breast (filet them)
1 teaspoon salt
1 teaspoon pepper
4 cups fresh chopped spinach
1 medium sweet onin /chopped
2 tablespoons olive or canola oil
4 ozs cream cheese/softened…(I used reduced fat for the cheeses)
4 ozs mozzerrella cheese (shredded) …
2 ozs crumbled feta cheese
2 ozs cheddar cheese (shredded)
1 egg yolk lightly beaten
1 tablespoon all purpose flour
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cumin
phillo pastry sheets /thawed
melted butter or margarine

filet chicken breast and place between plastic wrap and pound/flatten to aprox. 1/8 inch. sprinkle all with the salt and pepper and place aside

saute spinach and onion in oil until tender/ remove from heat…add in softened cream cheese/ them mozerrella cheese and next 6 ingredients.

spoon some mixture onto each of the chicken breasts and roll up jelly roll
style.

unroll phyllo sheets onto a lightly floured wax paper/surface. Take 2-3 phyllo sheets(your choice and lightly brush between them with butter.

(Make sure to keep unused ones covered as they dry out quickly(if you have a ceiling fan overhead…turn it off!)

Place chicken in center at the narrow end and roll up/ placing outside edges in as you roll. place in shallow pan and brush with butter.

Bake at 350 degrees for 30-25 minutes or until done.

gonna have to try that one this weekend.

was really easy…really…hardest thing was working fast enough that the phillo didnt dry out…next time will use a extra sheet on it too…

youre the only one who noticed it :slight_smile: crabs have to eat too you know :slight_smile: lol…going to see my dad today…hopefully will have me some “peelers” to bring home…yummmm

I tried a recipe you had with sun dried tomatoes and shrimp from a while back and it was outstanding. I was not a member of the forum at the time, so I apologize for it taking so long to comment. Based on that success I will be trying alot more of your recipes. You are Great!
