Stew a whole chicken, cut up or not, or whatever chicken pieces you prefer in a pot of salted water 'til chicken is done - remove chicken from stock when cooked. Depending on what kind of dumplings you prefer, there are several options:
You can purchase the frozen dumplings which are the flat rolled ones, or you can mix up Bisquick according to the drop biscuit instructions on the box and drop them into the chicken stock to cook until done through (after removing the chicken to clean, debone, etc.) I’ve also heard you can buy canned bisquits to cut into pieces and drop into the chicken broth to cook until done, but I’ve never done so.
After dumplings are nearly done, add cleaned chicken to the dumplings and stock. Season to your liking and add a little milk or cream to thicken if you’d like.
Penny will often use a roasted chicken purchased from the Deli - I think she makes her drop dumplings from biscuit dough cooked in chicken broth and then adds the cooked chicken that she’s cut up… I’ve had her chix and dumplins before, and they’re great! Hers remind me of the ones my Momma’s Momma made when I was little. Jack prefers the flat dumplings which is how I usually make them (using the frozen ones), and they remind me of how my Daddy’s Momma makes them still today (and she’ll be 90 years on on December 20th!) sharky…I take a deli roasted chicken…tell them dont pour the juice off…bring it home…pick it off the bones…set aside. take a large can of chicken broth and add some water,salt/pepper…little butter…small can cream of chicken soup…I thin slice a little celery…bring to liquids in pot to a boil…throw the chicken in and simmer medium high.a little longer… then I take 1 cup self risng and 1 cup plain flour …add a little milk and stir until dough forms…roll a few times like you would for biscuits… then roll into small golf ball size dumplings(or a little larger) and drop into pot…put lid on…and I take a spoon and flip them a little as they cook on medium…when they look to be almost done reduce to low and simmer a little more…

Went by the new Costco the other day (Augusta) & got 2 fresh off the Rotisserie ($4.00 each) and made the Chicken & Dumplings.
The bride, son & self cooked it up. Added the carrots too.
Only change from ya Penny was while in the store I told my son I think the bag of flour we have is self rising so we bought “All Purpose”. Guess what??? Wrong.
So we used Bisquik…worked great.
