My wife has been dying for me to get some fresh oysters so today while we had some free time (fish weren’t biting) my son and I found a spot and harvested a bucket full. We also found a couple dozen really nice clams that he insisted on keeping (he loves clams). Well, now we are home with them but are not really sure what to do next. What is the best way to clean and prepare them to eat?
I like to freeze and thaw them to get them to open easily. Then bake or grill them on the half shell with a dab of your favorite bbq sauce or with a mixture of sharp cheddar, diced onion and jalapeno, and a bit of honey butter. It doesn’t hurt to chop the clams up a bit if you’re cooking it with the cheese mixture.
I also made a chowder the other week with some clams and oysters that I picked which I put over grits and it was mighty good.
what easy said if they’re steamin’ size (smaller than a racquetball for me)… what rap said if they ain’t.

steamed plain with lemon/old bay/butter
steamed in white wine, garlic, lemon and onion, eaten with toasted french bread dipped in broth
clams casino- chopped and returned to shell with lots of bacon and cheese love, then broiled
with a small number of them, i think it’s worth hitting each one with a scrub brush during cleaning to eliminate grit in your broth (if you want it)… in any case, i always pour off everything but the dregs, then return clean broth to a clean container for dipping.
