SO i have heard from a lot of people how skate taste like scallops. So, i think next time i catch one im planning on keeping it to test this scallop theory.
Do you just eat the wings? skin on? eat any part of the body?
Never cut into one, so clueless… Have always done what 90% of people do… throw them back.
if they’re anything like a stingray…forget about it…! they concentrate urea in their tissue and it makes them taste terrible…even if you soak them in mild. The texture is like sandpaper. Why people say that you can eat them, I’ll never know.
Best thing to do with a skate is cut it in half, put it on a 9/0 hook, and catch a big ol’ shark with it. I think stingrays and such taste like crap. Some will argue but they could also be the same person that sits at the red light picking their nose and eating it.
I have cleaned and eaten skate and wouldn’t do it again. Remember you can wrap those little treats the cat leaves under the porch, my lab likes them as they are, in bacon and put bbq sauce on them and some people would enjoy them.
Skate taste NOTHING like scallops. True skate (not stingray) is sold to fine dining places as a main course. If you want to know how to fillet a skate wing, bring a whole skate by the store and I will show you. Skate have a large piece of cartilage in the middle of the wing and you must take the meat off the cartilage and then skin it. pretty easy once you understand the physiology of the animal. Sting ray is similar, but does not taste the same as a skate.

I cleaned one & cooked for some friends that were a little dismayed to say the least. Did as Sells said. Fillet top off down to cartilege them flipped over & same on other side then removed skin.
Cooked it in some olive oil, little butter & garlic & it was really good. Everyone enjoyed it. Really!

Here’s a old but good recipe for skate. Clean it and place it on a pine board. Add salt, pepper, and lots of lemon and butter. Place it on indirect heat on your grill. Cook it on medium for about 30 minutes. After 30 minutes, pull it off the grill, throw the skate away and eat the pine board!

I like jalapenos or crushed red pepper with my pine board.
99% of you have NEVER eaten skate…it is very mild, with a taste similar to sole or flounder, actually pretty good. It is eaten more in Britian and France then here. Most of it is exported. I will let you know when I bring more to the store.
