Caught a couple cobia Monday & was wondering if anyone would like to share thier favorite recipes??

I like it grilled. Salt, pepper some/ any fresh herbs and olive oil. Caution. Cobia becomes very dry quickly if overcooked.

Jipride is 100% right about drying out. Marinated in Italian dressing is good or dusted with lemon pepper.

If you toss some veg, blanched thin sliced red potato, and fresh basil in vinaigrette, season fish with kosher salt and fresh ground pepper, and bake wrapped in parchment paper (cut paper in shape of a heart, put fish in center and fold in edges) fish will steam and won’t dry out.

Grilled Cobia

Ingredients:

4 Cobia filets about 1 inch thick
2 lemons juiced and equal amount of EVOO
2 cloves of fresh garlic minced
1 tablespoon fresh parsley
1 tablespoon of Greek Seasoning
Salt and pepper

Instructions
Spray grill with nonstick spray or brush with vegetable oil to prevent sticking.
Whisk all ingredients together and marinade fish 45 minutes
Preheat grill and cook until done
