I bet some of these people on this thread have ordered “cod” grouper at a restaraunt before.

Dig a hole. Fill it with charcoal. Light the charcoal and burn till you have glowin coals. Add soaked Hickory chips to the top of the coals. Lean an Oak plank on the downwind side of the the pit. Fillet the Kingfish and tack it to the Oak Plank and as it smokes, brush on your favorite marinade every half hour until the fillet’s are cooked. Then discard the fillets and eat the plank.

Back in the day when i was a young un growing up in the west indies the natives used to mash up spiny lobsters to use them for bait in fish traps to catch parrot fish, grunts, angels and the like to eat. Then tourists arrived, kinda like the internet, and were willing to pay big $$ to actually eat that stinkin’ fish bait. So the natives started mashing up the parrot fish, angels and grunts as bait to catch lobsters so they could sell them to the tourists for $$ which they used to buy chicken and rice. Don’t mean that chicken and rice tastes better than parrot fish and plantains, or lobster for that matter, but it does mean you can bet your ass I’m going to enjoy the heck out of any fish I don’t release alive or turn into bait for something more tasty! Couple weeks ago I caught a King fish while Cobia fishing. Hacked the fish up into four pieces and put in the freezer. Last weekend I put one of those pieces into my crab trap and parlayed it into nine stone crabs! I love King fish.
