I’d use my recipe for bowfin (mudfish)
gut it and skin it.
Season the outside w/everglades seasoning.
Place inside a brown paper bag in a baking dish.
Garnish w/ whole garlic cloves, 2 sliced onions,
red potatoes and baby carrots.
Re-season everything w/ salt, lemon pepper & paprika (for color)
Close the bag & bake for 45 minutes at 400 degrees.
Throw away the fish and eat the bag with the trimmings.
Why the bad rap on a mudfish? That’s actually good eating.
Toadfish are the chicken of the sea. Very tasty. Pretty easy to clean too. Here is a video link showing just how easy. The vid shows a special tool that was developed just for the purpose of cleaning toads. You could probably make your own by snubbing down a fork and bending a 90 deg. angle on it. Check it out.

Puffer!is not a “oyster toad fish”
Puffer!is too a toadfish. That is what they call the puffers on the OBX.
Oyster toads, nah, don’t know about those critters. Probably taste like greasy rotten oysters. Plus they’ll bite your dang fingers off.

One year up on the Eastern Shore of VA A buddy and I caught a bunch of puffer fish. We threw them all back and thought of them a nusience like oyster toads. A friend of the family said dont ever throw those back. They taste just like chicken when cooked right. Never had puffer fish but it seems I remember something about a japanese puffer fish that you take your chances on sushi wise. Very poisonous blowfish. Same fish different. Anty clarification appreciated and cool video blue.

I’ve only had them once. Caught severel at the OBX. There is much debate about whether or not they are poisonous. I know many people that have eaten them, including me, and lived to tell about it. The meat is incredible. A lot of folks target them at certain times of the year from the surf on the OBX.
From all of the opinions I’ve heard and read, the ones around the Carolinas are not the same as the ones that are extremely poisonous.
Disclaimer: If you become violently ill after consuming puffer meat, please don’t try to pin it on me.
Look out for the liver especially.

I kept one from MI this past summer with intentions of eating it. I couldn’t remember exactly how to clean it, butchered it pretty bad and it ended up as fertilizer in the landfill.
I think it is funny that we would try to clean a potentially poisonous fish that tastes “just like chicken”. I can go to the Pig and buy some chicken and as long as I cook it long enough, I know it won’t kill me. Just a thought! If it tastes “just like lobster” I might give it a shot!

Puffer a.k.a. sea squab or blow-toads are not poisonous. We served it at the restaurant deep fried with lemon aioli as a special a month ago. Crosby’s had a lot of em going out to locally. They are actually very tasty like everyone says. Reminds me of a monkfish and catfish cross. Blowfish a.k.a. Fugu are poisonous!
