Coon for supper

I got an ole black friend of mine to get his wife to “scramble” me a coon today.Brought it home,fixed me a pot of greasy rice (made with ham drippings),collards and sweet tater yams and some cat head biscuits. It don’t get no better than this where I come from!!!

Gotta ask… what’s a scrambled coon?

Maw-Maw always put them in a pressure cooker, then de-boned and put it in a skillet with some onions and gravy and after simmering for a little bit served over rice. Haven’t eaten a coon in 20 years… hmmm probably have to fix it when the wifes not home or get mom to coke it.

I certainly can’t comment on anything about the coon cooking (although I think I’ve heard my Granny say she has prepared and eaten them before[:0]!), but a “cat head biscuit” is referrred to as such in that the biscuit is big and fat and somewhat resembling of a cat head!

I just can’t bring myself to eat anything that smells like a sweaty gym sock when you skin it. Have eaten just about everything else out there ,but have had to draw the line with raccoon…maybe if prepared right, who knows?
