Wanted to get some sausage made from the gator I got on opening night, but Cordray’s just told me they won’t do it if they didn’t skin it.
Who else in the area makes a good gator sausage? I’ll take my $$$ there since Cordray’s doesn’t want it.

He’s awful. Typical. They are a joke to skin but people don’t know it and pay small fortunes. Buy a meat grinder and say goodbye to the processor.

As I understand it they only process whole game because that way they can
Confirm it’s freshness and not risk contaminating theyre equipment and other meat. And I believe per DHEC pigs and gator processors are required to follow special guidelines that’s why only a handful of processors statewide will take them

Skinned one tonight like you would a deer, not bad at all. Lets see how much cartilage and tendons we eat tomorrow though hahaha! Wanted to tan the hide to hang on the wall, but cant afford the price per foot to tan. Looks like lots of salt and scraping…hoping it holds up!

skinning them is no trouble at all (compared to any non-dinosaur), neither is breaking one down. and if you grind the meat yourself, add plenty of extra pork or beef fat to a small batch, taste it, and adapt- it’s extremely lean.
and BTW, when i last checked, there were only a couple commercial gator skin tanning operations in the country, and i think all in alabama/georgia? those guys buy bulk loads of skins from commercial guys and processors (in our case, i think it’s after the season is over). tanning seems to be a pretty difficult process (compared to a deer hide) because of the very tough skin and scutes.
not tough to preserve it by scraping and salting or rolling and freezing until you make up your mind on what preservation method you want though!
I watched one of those Cajun gator hunter use a pressure washer to flense the hide of a gator, he made it look easy. He also said to make sure you remove any fat from the meat you plan on eating. The fat supposedly is kinda rank and will ruin the edible meat.
