Dont throw it away!...small salmon pieces

Brother in law gave me some fresh “silver bright” salmon and some of it was in very small pieces that he said he was sure “you ll figure out something to do with it”:smiley: I searched and found this recipe. Now dont go turning your nose up like donnie did…donnie who later ate two helpings of it and said he really liked it :smiley:…lol …miracles do happen!

15 minute recipe(cook time)
what you will need…

pasta
unsalted butter(4 tbsp)
kosher salt (1 tsp)
fresh ground pepper (to taste)
1 lb salmon filets or pieces
2 sliced leeks
bok choy ( I cut two large stems)
chives

cook 3/4 lb spaghetti…set aside
season salmon with salt and coursley ground black pepper
place 2 tbsp.butter in large non stick skillet over medium-high heat
place salmon in pan and cook 4-6 minutes on each side

remove, break apart and flake if in larger filets…set aside.
place additional 2tbsp unsalted butter in pan and add leeks and bok choy to pan and cook 4-6 minutes until tender. add pasta and salmon and toss. serve with chives on top.

has a very mild but great taste to it…

had fried donnie some shrimp…“just in case” …could have added a salad to go along with the pasta and he would have been just fine with it:wink:

ahh salmon…1 of my favorites that i miss going after every late summer! if you have more smaller salmon pieces and make crab cakes but with salmon instead that works great too. may have to try that idea though.

Miss my salmon too-used to hit Lake Michigan every spring on a friend’s charter boat and usually bring back in a limit of coho, steelhead and an occasional king. Friend sold his boat and we just never found another charter that seemed to be the same…times changed and we haven’t been up there for over a decade now :frowning:

Going to cook some salmon patty burgers later today

i chartered with capt jerry lee out of ludington and except for 1 trip (fishing is fishing) always came back with a limit…even when the limit went to 5 kings per person. usually had kings but we bought back a couple big cohos and an occasional steelhead too.

People keep asking me if it was “really fishy”. It wasn’t at all.
