Brother in law gave me some fresh “silver bright” salmon and some of it was in very small pieces that he said he was sure “you ll figure out something to do with it” I searched and found this recipe. Now dont go turning your nose up like donnie did…donnie who later ate two helpings of it and said he really liked it
…lol …miracles do happen!
15 minute recipe(cook time)
what you will need…
pasta
unsalted butter(4 tbsp)
kosher salt (1 tsp)
fresh ground pepper (to taste)
1 lb salmon filets or pieces
2 sliced leeks
bok choy ( I cut two large stems)
chives
cook 3/4 lb spaghetti…set aside
season salmon with salt and coursley ground black pepper
place 2 tbsp.butter in large non stick skillet over medium-high heat
place salmon in pan and cook 4-6 minutes on each side
remove, break apart and flake if in larger filets…set aside.
place additional 2tbsp unsalted butter in pan and add leeks and bok choy to pan and cook 4-6 minutes until tender. add pasta and salmon and toss. serve with chives on top.
has a very mild but great taste to it…
had fried donnie some shrimp…“just in case” …could have added a salad to go along with the pasta and he would have been just fine with it:wink:
