Ever seen a commercial bottom fishing boat drift?
We like to drift a few times before anchoring up to see what the initial bite is like. If its decent, we’ll anchor. You will catch better quality fish if you anchor up. No question about it. We end up catching a lot more grouper/snapper while anchored up.

So, you didn’t want an answer to the question??? Now, I am confused.
I toss a buoy(s) to mark a spot where I see good activity on the bottom machine while I continue circling the area. Then drift it a few times. If it’s good, then anchor. Now you already have the anchor course from your drift track on the plotter. Or toss a paper plate out on your buoy and that’ll give you the anchor course.
Yep, I do it the same way. A few test drifts to determine the bite and drift direction, then anchor. Sometimes use a marker buoy, especially if it’s rough. Learn to use an anchor ball for pulling the anchor and it’s easy.
