Dumb deer processing question.....

I usually ask for half ground beef, half cube, and the loins.

Of course I usually get more ground beef than cube steak.

I got too much ground beef now, next deer I shoot, I want all cube steak. I guess I can only get so much cube steak? The rest will be have to be ground beef?

If you’ve never butchered, not a dumb question. A deer is only so big and you have to have a continues piece of meat to run through a cuber. You will have more that needs to be ground than you will get cubed.

I would also ask for the back straps whole as well as the loins. Those are just too good to be cubed or ground. :wink:

BW i agree with fred.

An awesome recipe for those loins and dont forget those roast from the rear quarters

2-3# venison roast/loin
one r two cans of golden mushrom soup
one can of water per can of souo
soak roast in 25% vinegar 75% water bath 4 hr to overnight
depending on size of the deer harvested
Place roast/loin in your crockpot on low for 6- 10 hours
serve when tender over rice r potatos

Maybe you can consider it “Ground Beef” becuase don’t they use “Beef Fat”? Or maybe they could call it “Ground Beef Fat Venison”…

Some that ends up being ground could be made into stew meat.

if you have extra ground meat making your own summer sausage isnt difficult at all. im sure you could come up with dozens of recipes on google but find a baseline and adjust seasoning according to your taste.

not in mine. straight ground venison.
