Ok…heres a quick and easy recipe…something you can throw together in about 25 minutes tops…one pot…Really…
what you will need>
*2 quarts water in a large pan or dutch oven
*(1) 16 oz package of vacuum sealed gnocchi
(sounds kinda like n0-key when you say it and it is a potato dumpling with cheese inside)I found mine on the pasta aisle at Bilo 3.29
*4 cups(about a pound) of fresh asparagus, chopped in aprox 2" pieces
- 1-2 lb shrimp peeled and deveined
Pesto…I have made it fresh but the jar one is almost as good…have used the “classico” basic basil pesto and the “Christopher Ranch” basil pesto…and the recipe that I will add at the end of this for fresh one…
bring water to a boil in the sauce pan…dash of salt…separate dumplings and drop in water…
cook 2-4 minutes or until they float to the top…using a large slotted spoon remove from boiling water and place in warm bowl
(I used a smaller warm bowl for this then placed in this one when shrimp were ready.)
put shrimp and asparagus in the same boiling water and cook 5 minutes or so…until shrimp are pink and done and asparagus are still crisp but done…
drain and place in bowl with warm gnocchi…
add desired amount of pesto and gently toss/stir until coated
