Easy lunch..Chicken Tetrazzini

Left over baked chicken?..heres a easy recipe

3-4 cups cooked chicken…cut into small pieces
salt/pepper to taste
8 ozs pasta cooked and drained
6 tablespoons butter
8 ozs sliced mushrooms(optional)
1/4 cup all purpose flour
1 cup light cream or half and half
2 cups chicken broth
1/4 cup dry sherry
1/3 cup grated parmesan cheese

paprika(optional) I use a dash

preheat oven to 450

cook past as directed/rinse and set aside

melt 2 tablespoons butter in skillet over medium heat-low heat,saute mushrooms. set aside.

Melt 4 tablespoons butter in saucepan,stir in flour,add 1/2 teaspoon salt,stir until smooth, add in chicken broth and cream.

Add chicken, mushrooms and sherry and heat through. place pasta in buttered casserole dish, pour sauce over…top with parmesan cheese and sprinkle with paprika to taste. Bake at 425 for 15-20 minutes until hot and bubbly.

Gurl I always look for that crab!Thanks for the post.Im sitn here at the computer like a Po A** redneck that I am eatn livers,gizzards,hearts,Texas Pete and an ice cold Bud!But you know what?Im luvn it!

man I love me some fried gizzards and hearts…and theres a art to cooking those…cook to little…:(- yuk…cook too long…your jaws will be sore for a few days for sure!..I like hot sauce on mine too!mmmmm
